I think a picnic in a park would be a good way to start things off. Spend some time getting to learn a few things about each other. Go for a walk afterwards, or throw a little frisbe. Going to shoot a little pool after an afternoon in the park. Maybe have a drink or two before calling it an evening.

I'm not much a thrill seeker. I have to work up the nerve to ride a roller coaster but really enjoy having ridden it afterwards. I do enjoy trying other new experiences that have a lower likelihood of death if things go wrong.
